Vegan TVP Lentil Tacos – Rice Cooker Recipe

Everybody loves tacos, but have you ever tried TVP Lentil Tacos?

If you haven’t, you should definitely try them! I have NEVER been so satisfied with something that I’ve “veganized” in my life. Honestly, re-fried beans make a delicious taco, but TVP and lentils go above and beyond my expectations!

Here’s why TVP & lentils make awesome tacos:

super tender and chewy
provides a “meaty” texture
unbelievably simple yet delicious
two of the cheapest ingredients in the world

If you haven’t already started using lentils as your “meat” substitute, I highly recommend trying it! Not only will you save tons of money, but you’ll stay fuller longer and your pants will fit better😉!

Listen, I was the #1 fan of tacos as a kid. Taco night was once a week in our house and I lived for that. Fun fact: I never stopped loving tacos, I just switched up the ingredients. So if you’re feeling weary about giving this new “meat” a try, trust me when I tell you that I was the ultimate skeptic! Like, what are lentils even about? Well…

Lentils are great for:

replicating “meat”
lowering cholesterol
stretching out meals

maintaining healthy weight
not breaking the bank for protein

Once you start working with lentils, you will fall in the love the way I did. They’re so amazing because of how accessible, cheap, and flexible they are! By flexible, I mean you can literally make your lentils taste like anything you want!!!

P.S. I’d pick these over Taco Bell any day of the week!

  • 1 cup dried lentils
  • 1 cup Textured Vegetable Protein
  • 6 cups water
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp oregano
  • 1/2 tsp cayenne pepper (optional)
  • 1/2 tsp black pepper (optional)
  • Himalayan crystal salt to taste

  1. Pour all ingredients into the rice cooker
  2. Turn on rice cooker to the setting that will cook the lentils long enough ('white rice' works for me)
  3. Once cooked, add crystal salt to taste
  4. Enjoy in taco shells or lettuce boats with your favorite taco toppings!

Because of how salty pre-made taco seasoning packets typically are, be generous with your crystal salt!
